I first met Joni and John about 2 years ago when they began the search for somebody to help them with their wedding. The wedding was to be held at ST. Michael's with the reception to follow at the El Cortez in San Diego.
We discussed so many things with regard to menu and decor and style. All the food choices were made with respect for their heritage, and family. At the cocktail hour, we served mini empanadas filled with beef, Asian spoons of Pad Thai, crab cakes with wasabi aioli and shrimp mini tamales. Dinner started with a classic Waldorf Salad followed by Flank steak with Spanish rice, mango salsa marinade, plantains and a sweet potato salad with cilantro, lime and cumin.
The cake was a homemade coconut cake with coconut buttercream frosting and raspberry coulis. YUM!
They were an adorable couple when I first met them, and as I got to know them over the 18 months that we worked together to plan their wedding, I began to realize more and more, each time we met, how much they truly loved each other. It was a treat for me to see two people so happy together, and when it came to the wedding day, how happy they were with everything that we had all worked on together.
I love these two!
