there was enough food from the shopping to make another version of this the next day with the carrots, apples, garlic and i still have more onions!
garlic, apples, onions, pork shoulder all in one roasting pan, salt, pepper, squeeze the juice from the orange on to the pork and add the whole orange to the roasting pan. add about 2 cups of water or stock, the chirizo, to a pre heated 300 oven. roast about 2 hours. with the garilc, juice drippings, and apples, add to blender and blend for a great gravy.
i cook the carrots separatly in salted water or stock, adding butter before service
