    Leftovers: What do I do with all this FOOD?

     Yesterday, I posted my thoughts on Thanksgiving Dinner and, my turkey. I knew before had like I said yesterday that I wanted to edit my menu choice to include less food, so none is wasted, and I knew I wanted to utilize what was left over to enjoy in some other "incarnation".

    Below are a few of the "incarnations" that I came up with.

    Olive Oil poached egg over turkey, chirizo, black bean, sweet potato "hash" with seared onions and thyme. (my dressing was made with black beans, chirizo, jalapenos

    For this dish, I simply combined some of the turkey, the dressing, the sweet potatoes with a little olive oil and pan seared it in a ring mold, then baked it for about 10 minutes at 350. In a smaller ring mold, I poached the egg with olive oil, and this dish was a HIT!

    Luxurious Turkey Soup

    I love soup, you all know I do, and I really think that a good turkey soup can be so luxurious and comforting. For this soup, I placed the entire Turkey carcass and meet in a large stock pot and boiled it for about 2 hours, after words, I turned down the heat to simmer, added the left over celery that I did not use in the dressing, onions, all the left over herbs, white potatoes that were left over and sweet potatoes, carrots, and the sprouts.......I covered the pot and let it simmer for about an hour.

    Sweet Potato Pancakes with Molasses and Fried Eggs

    I did and do confess that I used a pancake mix for this, and added 2 smashed sweet potatoes, a little sugar, and smoked paprika, and extra egg and then I mixed it well in my food processor. I like to let pancake mix set a little bit before I make them, so this mix rested about 20 minutes before I used it. The Molasses was a wonderful surprise instead of using the typical maple syrup.
